Meatless Without the Melancholy

Meatless Mondays are good, but why stop at just one day a week? Here's a selection that's light on the meat, but heavy on the flavor.


Dinners
  • Sunday: Primanti-style pastrami sandwiches*
  • Monday & Wednesday: Spinach lasagna, green salad
  • Tuesday: Rosemary merlot flank steak**, mashed potatoes, green beans
  • Thursday: Indian-spiced pork in tomato sauce**, rice, zucchini
  • Friday: Pasta w/ roasted butternut squash and shallots**, roasted asparagus
Lunches
  • Broccoli and cheese soup**, tomatoes
Snacks
  • RF string cheese
  • apples
  • grape tomatoes
  • light rye crispbread
  • pineapple chunks in stawberry gel
